Who doesn’t love a nice, warm English muffin? With the addition of homemade toppings, they get even better! Ever since learning how to make these amazing English muffins, we haven’t wanted store bought at all. Some of our favorite toppings are butter, jam or peanut butter and cinnamon sugar!
I got this bread machine for Christmas last year and have been experimenting with all sorts of creative things. This particular recipe works really well and it results in the classic English muffin with all the nooks and crannies you crave. I love making these as a treat for my mom when she comes over because they are her favorite.
Ingredients
1 cup milk
3 tablespoons butter
1 egg
1⁄2 teaspoon salt
2 teaspoons sugar
3 cups all-purpose flour
1 1⁄2 teaspoons bread maker yeast
cornmeal (for dusting work surface)
Directions
1. Add all ingredients in the above order to your bread machine and set on the dough setting. (Tip: Make a little dent in your flour to add the yeast in.)
2. Dust the counter with cornmeal and press the dough into a 1/2″ thick rectangle. Use a 4″ cutter to cut out 8-10 English muffins. (I’ve never gotten 10 it’s always 8 and a “tiny tester”, although I’m determined to keep trying.)
3. Place the dough on baking sheets in 4″ pastry rings, cover with a tea towel and let rise in the oven with the light on for 20 minutes.
4. Cook the muffins in the ring on a skillet set to medium heat for 3-5 minutes on each side being careful not to let them burn. (I like to have a nice warm, dry heavy skillet ready and waiting before I start cooking them.)
5. Pop the rings off as soon as you can handle them, and let them cool on a wire rack.
